Vegan and Gluten free Puffed Oat Donuts: No Bake Recipe
Vegan e gluten free puffed oat donuts are super snacks that can be prepared in no time. They are without butter, without oil, without eggs and without cooking. To prepare them you will need only 2 ingredients, puffed oats and dark chocolate, then if you want to make them even more delicious, add fresh fruit and dried fruit. I assure you that you will fall in love!
Puffed cereals are fantastic products in my opinion, you can make many recipes. Like a cheesecake, a cold cake, filled baskets or some fantastic donuts, just let your imagination run wild!
In my food storage there is never a shortage of puffed rice and buckwheat, I love them. In the kitchen they are versatile and fit everywhere. In milk, in yogurt, in smoothies. But this time I chose another puffed cereal, gluten free oats.
I know that many celiacs do not consume it, either because it is not tolerated or for fear of contamination. But I am of the opinion that if oats are certified gluten-free it is a safe cereal to consume safely. If in doubt, always ask your doctor.
About to puffed oats, the grains are much larger than other puffed cereals, remain compact in contact with liquids and retain their crunchiness.

Melt the chocolate in a double boiler, as soon as it is completely melted, transfer it to a bowl together with the puffed oats. Mix well until the oats are completely covered with chocolate, add the rum essence, half of the raspberries cut into the mixture and continue mixing. Line a donut mold with baking paper, start transferring the dough inside and form the donuts. Cut the fruit and add it between the oats and let it cool in the fridge for a couple of hours.
When they are compact, pour over the peanut butter and serve.
