Salmon & Avocado Wrap

Doesn’t the idea of a lunch or dinner with a delicious piadina tickle you?
This recipe is perfect for those who love street food like me.
Also ideal for those in a hurry and have to eat outside the home and do not want to give up eating well!

250 of Rice Flour “Mulino Caputo”

200 ml of warm Water

1 sp. of Extra Virgin Olive Oil

1 sp. of fat free Greek yogurt

Q.b. Himalaya salt

½ tsp. of Bicarbonate

250 g of Wild Salmon

1 Avocado

10 Cherry Tomatoes

Q.b. Rocket salad

in a bowl add the flour, salt, baking soda, oil, yogurt and water a little at a time. Mix all the ingredients.
Work the mixture on a floured wooden surface until you get a homogeneous mixture.
Put the dough in a food bag and let it rest for 30 minutes at room temperature.
After the resting time, take the dough and divide it into 4 equal parts, form spheres and work them for about 30 seconds so that they become smooth and uniform.
Lightly flour the work surface and roll out the dough with the help of a rolling pin to a thickness of 2-3 centimeters.
Heat a non-stick pan and cook the wraps for 2/3 minutes on the side.

Once cooked, stuffed and served!
