Pumpkin and Chocolate Cookies

Pumpkin is a very versatile vegetable in the kitchen, ideal in both sweet and savory preparations, even with chocolate!
From that delicate and “Strong” touch at the same time.
Easy to prepare, it will take about 25 minutes.
Here’s what it takes to prepare these wonderful cookies.
200 g of Pumpkin
75 g of Rice flour
75 g of Buckwheat Flour
6 pc. Dates
50 g of Hazelnuts
40 ml of Rice Oil
2 tsp. of Cream of Tartar
1 pinch of Himalya salt
Q.b. Chocolate chips
Q.b. Cinnamon powder
Turn on the oven!
Cut the pumpkin into pieces, cook for about 10/12 minutes.
As soon as it is cooked, transfer the pumpkin to a mixer, add the oil, dates, cinnamon and salt. Blend until the mixture is smooth and homogeneous.
Add the hazelnuts, flour and yeast and continue to mix.
Transfer the dough to a bowl, finally add the chocolate chips.
With wet hands, form the cookies and place them on a baking tray lined with baking paper.
Bake at 180 degrees for 15 minutes.
Serve them with a sprinkling of icing sugar.
