Plumcake figs and nuts


As you know, the pairing of figs and nuts is a perfect combination, they are the main ingredients of this recipe with a rustic and delicate flavor.

It may seem like a purely autumnal dessert, but it can also be prepared in this period … for a healthy breakfast or even for a snack it is exceptional.

I love the sweetness of the figs and the crunchy nuts.

A delicate dessert with an unforgettable flavor!

Ingredients for a 24cm mold:

200 g of Rice Flour

150 g of Coconut Sugar

100 ml of Rice vegetable milk

50 ml of Seed oil

4 Eggs

1 Sachet of Cream of tartar + 1 tip of a teaspoon of baking soda

2 Fresh figs

50 g of walnuts


Pour the eggs and the coconut sugar into a bowl, work the mixture for at least 8/10 minutes with the electric whisk until a light and frothy mixture is obtained.

Add the oil and milk and Keep mixing. Finally add gradually sifted rice flour, chopped walnuts and lastly the yeast.

Cover with Baking paper; wet and squeezed, the plumcake mold, pour the mixture inside, add the sliced ​​figs and bake at 180 degrees (static oven) / 170 degrees (fan oven) for about 45 minutes.

After the cooking time, test the toothpick to make sure it is cooked.

Once cooked, let it cool completely.
