Method:
Boil the water for the pasta.
In a pan, add a drizzle of oil and the finely chopped shallot, as soon as the oil reaches the temperature, add the chopped mushrooms and brown them over high heat for about 2/3 minutes.
Cook the pasta 3/4 minutes less at the indicated cooking time.
Add a little cooking water to the pan and add half of the feta cheese cut into small pieces, mixed until the feta is a smooth cream.
Drain the pasta and finish cooking by adding it to the mushroom sauce.
When cooked, mix the pasta with a little a bit of oil, parmesan and pepper.
Serve the pasta with the other half of the crumbled feta and decorate with a basil leaf.
