Gluten free spicy Christmas Cookies
I like to think about Christmas, its atmosphere, it makes everything more Magical.
I like to go back to being a child and still feel the amazement in front of the colored lights of the Christmas tree.
I like to get into the kitchen, prepare an infinite quantity of biscuits and then give them to those who can appreciate a small gesture made with the heart and above all homemade, like my Gluten free spiced Christmas Cookies.
These fragrant biscuits are butter free,milk free and sugar free. I used spices and a little honey to give that touch of sweetness, but you can also choose to prepare a shortcrust pastry flavored with cocoa, hazelnut, vanilla or the classic version and then cover them with chocolate glaze.

150 g of Oat Flour G.F.
100 g of Rice Flour
10 g of Almond Flour
50 ml Egg white
60 ml of Coconut Oil
100 g of Greek Yogurt
1 pc of Himalaya salt
Q.b. Spices (cinnamon, ginger, carnation flowers, nutmeg)
1/5 of a teaspoon of Baking soda
15 g Acacia Honey
Q.b. of Vanilla powder
5 g of Cocoa powder that you can use in half the dough to make the cocoa version as well.
Preheat the oven to 180 degrees.
In a bowl, add the sifted flours, spices, salt and baking soda, mix with a wooden spoon. Pour the oil, honey , egg white and finally the egg, continue to mix and then begin to work the dough with your hands until you get a smooth and homogeneous dough.
Let the dough rest in the refrigerator, wrapped in plastic wrap, for 40 /50 minutes.
After the time has elapsed, roll out the dough, about 2 centimeters thick, with the help of the cookie cutter in the shape, obtain the shapes and place them on a baking sheet covered with baking paper.
Bake at 180 degrees for 15 minutes.
After the cooking time, remove them and let them cool.
