Gluten free oats biscuits with carrots and chocolate: Recipe with coconut oil

I like dry, homemade biscuits. Those freshly baked that are still hot, you would eat them one by one.

Crunchy at the right point, they are prepared with “gluten free” oat flakes, rice flour and lots of carrots. The soft dough is with coconut oil, it does not need rest. So easy that you only need a spoon. Simple and fast, my carrot biscuits, which just mix all the ingredients, put them in a dripping pan and cook them.
You will prepare delicious biscuits for breakfast that you will love!

Method:
In a bowl, add the egg, maple syrup and mix with a whisk. Pour the oat flakes, the rice flour, the vanilla flavor, the salt and the melted coconut oil, previously in the microwave for a few seconds. Start working the dough with a spatula. Add the grated carrot, the pineapple juice and the baking soda, mix all the ingredients well.
Create your cookies directly on the dripping pan lined with a sheet of parchment paper. Add the chocolate chips on the surface and cook, static oven, for 15-20 minutes at 180 degrees. As soon as they are golden, take them out of the oven and let them cool.
Your carrot biscuits are ready!
