Gluten free caprese basmati rice croquettes: Bake in the oven
The caprese basmati rice croquettes are delicious spheres stuffed with rice, tomatoes, fresh pesto and parmesan. The characteristic of these croquettes is the crunchy breading made from rice flakes.
Rice flakes are ideal in the kitchen, to prepare natural and light recipes, a good alternative to breadcrumbs. They are low in calories and rich in minerals and vitamins. It is a naturally gluten-free cereal therefore suitable for celiacs. This is why I always use quinoa, rice or oat flakes for my breading, because they are rich in nutrients and contain very little salt.
Let’s go back to the croquettes, as you well understood they are a facsimile of arancini, but much lighter. They have no butter and the filling is very light and simple, they are not fried but baked in the oven.
Well let’s say they have nothing to do with the wonderful Sicilian arancini, but we women in the summer, we know, we want to keep ourselves read.
An excellent variant to bring to the table as a first course or for a delicious aperitif. But also to take to the beach to replace the classic rice salad. Their Mediterranean flavor will win you over believe me!

Cook the rice in abundant salted water. When the water is completely absorbed, the rice will be cooked. Transfer it to a bowl and let it cool completely. In the meantime, wash and cut the tomatoes in half, pour them into a pan with a drizzle of water and the garlic powder, add a pinch of salt and cook until completely softened. Prepare the pesto or you can use packaged pesto. Chop the rice flakes.
Take the rice, add the egg yolks, pepper, pesto, parmesan and cooked tomatoes. Mix all the ingredients until well incorporated. Start preparing the rice balls, pass them in the rice breading and arrange the croquettes on a baking sheet covered with baking paper.
When the balls are ready, with the help of a brush, wet them with the egg white and bake (oven hot) at 180 degrees for 30 minutes.
Remove from the oven and let cool before serving. Your caprese rice croquettes are ready!
