Crumbled Pears and Goat Cheese

The crumbled is a cake with a crumbly texture but with a sweet and soft filling. It is prepared with a unique ease, only with the hands.
This time on the table I bring you a dessert with an intense flavor, Pear, Caprino and cinnamon.
The sweetness of the pear with the intense taste of the goat cheese gives the dessert a very particular taste, all to be discovered.
A good idea to complete a dinner with friends!

Ingredients for the pastry:
300 g of Rice Flour
1 Fresh egg
1 Yolk
80 ml of delicate Extra Virgin Oil
2 sp. of Acacia Honey
1 Lemon
1 tsp. of Corn Starch

3 Large Pears
250 g of Goat’s Cheese
1/5 tsp of Cinnamon powder
1/5 tsp of Vanilla powder
2 sp. of Agave Syrup
Q.b. Water

In a bowl, add the flour, oil, egg, egg yolk, lemon zest, cornstarch and honey.
Mix all the ingredients with your hands until the mixture becomes crumbled.
In a pan add the pears cut into small pieces, cinnamon, vanilla, agave syrup and water (about 2 fingers).
Cook the ingredients over low heat for about 7/8 minutes, until absorbed.
Pears must be soft.
In a springform mold, lined with parchment paper, add 2/3 of the mixture, pour the cooked pears, the crumbled goat cheese, cover with the rest of the dough.
Preheated static oven, bake at 180 degrees for 35/40 minutes.
When the surface is golden, the cake is ready.
