Baskets of Puffed Rice and Gluten Free Banana Cream: No-Cook Recipe

Today I leave you an amazing recipe, good for breakfast and excellent for a fresh snack.
The baskets of puffed rice and banana cream are light, good, easy to make and above all there is no need to turn on the oven. They are without cooking! They are prepared in less than 30 minutes, just melt the chocolate and form the baskets with your hands, leave them in the fridge for 20-30 minutes and then stuff them as you like. I have chosen to fill them with a delicious cream, banana cream.
Why bananas? Because I love them!
They are rich in antioxidants that help protect our body from the action of free radicals. Furthermore, bananas strengthen the nervous system, help in weight loss and contribute to the production of white blood cells thanks to their contribution of vitamin B6.

  • They strengthen the bones
  • They protect the sight
  • They are perfect for exercise
  • They improve concentration

Always remember, like everything you should always consume sparingly. If you have brown bananas, don’t throw them away, use them in recipes to sweeten sweets, replacing sugar or eggs.
For this recipe I used yellow bananas, they are less sweet and more compact.

Melt the chocolate in a double boiler. Transfer the puffed rice to a bowl, pour over the melted chocolate, add the chopped pistachios and mix until all the ingredients have blended well.
Line a muffin mold with parchment paper, start forming the puffed rice baskets, modeling with your hands. When you are done, transfer everything to the refrigerator for 30 minutes.
Meanwhile, prepare the banana cream. In a blender, add the chopped bananas, yogurt and vanilla essence, blend at maximum speed until the mixture becomes a smooth cream.
Take the baskets from the fridge, pour the cream inside, add the raspberries, sprinkle with grains and serve your baskets.
