Baskets of oats and Greek yogurt

 

Introduction:

Oat baskets are a sweet tasty and healthy snack.

Crispy on the outside and soft on the inside. To be filled as you want, from the custard cream, ricotta cheese or simply with Greek yogurt flavored with lemon and red fruits.

Ingredients for 5 baskets:

100 g of Gluten-free wholemeal oat flakes(I use Leev Havermout)

200 ml of Pasteurized egg white

300 g of Greek yogurt fat free (I use Fage)

1 Lemon Bio

1 Pinch of vanilla powder aroma

Qb. Coconut oil

Qb. Pistachio grain

Qb. Mint

Fresh fruit to taste for the garnish

Method:

Toast the oat flakes in a pan for 7/8 minutes, remove them from the heat and transfer them to a bowl and let them cool. Once they have cooled, add the egg white and mix the ingredients well, the mixture must be homogeneous.

Grease the muffin molds with coconut oil.

Transfer a spoonful of oats of the mixture into the molds and using the back of a spoon, create baskets creating a cavity in the center

Bake in a preheated static oven at 170 degrees for 10/15 minutes.

Meanwhile, mix the Greek yogurt with the lemon zest and vanilla flavoring.

Remove the baskets from the oven and let them cool.

Fill the baskets with yogurt and garnish with fruit of your choice, chopped pistachios and a few mint leaves.
